Food on Friday: Our new favorite smoothie

I’ve written about smoothies here before. We make a smoothie for breakfast every single day, and often for other meals as well. It’s my one way I can ensure that we start the day as healthy as possible.

To be honest, I am never going to be a big salad person. The idea of sitting down to consume a huge bowl of raw greens is just not appealing to me. And I can almost never get the kids to touch anything green. But I pack loads of kale and spinach into these smoothies and they gulp them down.

My other must-have in the morning is protein. We eat scrambled eggs and protein balls every morning, but I also add a big scoop of plain Greek yogurt to this smoothie. Having protein in the morning keeps us from getting hungry and cranky all day long.

I laugh when I think about the smoothies we used to make – with vanilla yogurt, frozen fruit, bananas and orange juice they must have had more sugar than an ice cream cone. These smoothies are as low in sugar as we can get, while still tasting sweet. The addition of coconut water packs some extra nutrients, and the substitution of avocado instead of banana adds some great healthy fats. Frozen cherries add antioxidants and sweetness.

Our Daily Smoothie
Ingredients
1 avocado
2 cups (or more!) spinach or kale
1 cup coconut water
1 cup frozen cherries
1 cup plain Greek yogurt

Combine all ingredients and blend. Enjoy immediately.
