Food on Friday: Creamy shrimp pasta (aka ‘carbo loading for Large Item Pick Up Day’)

Fun fact: Large Item Pick Up Day is one of my favorite days of the year. What’s that? You, too?

Oh, how I adore getting rid of junk. Almost as much as I adore finding old furniture for free on the street. Sadly, I have an out-of-town commitment this weekend that precludes me from fully partaking in this year’s festivities. (A weekend at the lake with my best girlfriends, eating cookie dough and watching Ashton Kutcher movies? I’ll be going reluctantly…)

But if you’re lucky enough to be staying in town hauling your old toilet to the curb, consider loading up with this pasta. It’s yummy, it feels a little fancy, and it’s on the table in about 15 minutes.

I’m not usually great at improvising, but I’ve never had a problem throwing together a great pasta dish with whatever we have around. I encourage you to do the same – I’m sure this would be delicious with chicken instead of shrimp and perhaps even tomato sauce instead of pesto. And of course, don’t go out and buy linguine just for this – any shape will do. Just promise me you’ll think of me, sleeping in and drinking chardonnay when I could be with you in Prairie Village, picking through giant heaps of dusty junk…
