It’s no secret that we loves ourselves some grilled bread. My favorite summer lunch just might be salad and grilled bread topped with yummy spreads. This whipped feta is creamy, tangy and perfect with just about any accompaniment. If we have any leftovers we fold it into our scrambled eggs in the morning. Yum….
8 ounces feta cheese, crumbled and at room temperature
3 ounces whipped cream cheese or ricotta at room temperature
Add crumbled feta to a food processor and pulse until small crumbs remain. Add in cream cheese or ricotta and puree for 4-5 minutes, scraping down the sides when necessary, until feta is super creamy.
We spread ours on grilled bread and topped it with roasted tomatoes.
