Food on Friday: A saucy start to 2013

I usually try to start the new year with intentions of eating better.

After weeks of overindulging, I’m ready to pull back and cook meals that are healthy but satisfying. This pasta fits the bill perfectly. It’s actually incredibly delicious (much more so than the ingredient list would lead you to believe) as well as being nutrient-rich and easy.

I’m not the biggest kale fan on the planet, but it totally works in this recipe. It’s become a staple in our house, and I suspect it will be in yours as well.
