Food on Friday: The magnificent marshmallow

One of my favorite things to do in the fall is to build a bonfire. I love the crackling logs and the smell of smoke. I love the beauty of the autumn leaves, and singing campfire songs. But most of all, I love roasting marshmallows. I guess it’s the 9-year-old in me, but whether it’s rocky road ice cream, Goo Goo Clusters, or s’mores, I always go for sweet treats that contain marshmallows. My favorite combination of all is probably marshmallows, peanuts, and milk chocolate.

I love freezing this simple chocolate bar and noshing on it whenever I get a marshmallow craving. I use a mammoth chocolate bar from Trader Joe’s that only costs $4.99. Last time I bought one my husband almost choked with disbelief at its size. “Don’t worry”, I said. “This will last me for months.” It took me eight days to consume the entire thing.

16 oz milk chocolate, chopped
1 cup mini marshmallows
1 cup roasted peanuts

Cover a cookie tray with parchment paper. Melt chocolate over a double broiler. Mix in marshmallows and peanuts. Pour onto parchment paper and spread into one layer. Cool in refrigerator. Break into pieces and enjoy!
